GLUTEN FREE BANANA-COCONUT MILK ICE CREAM

INGREDIENTS
450 gms ripe bananas, pureed
525 ml coconut milk
1/4 cup sugar
1/2 tsp rum
Juice from half a lemon
pinch of salt
Method
Blend all the ingredients together and make a fine puree. If you have an ice-cream maker, add the puree to it and follow the instructions to make the ice cream.
Else you can pour the mixture into a freezer proof bowl, cover and freeze until set. Once frozen, beat thoroughly using a blender and freeze until set.
Serve with some banana slices & coconut pieces if you prefer.
