ZUCCHINI in PESTO SAUCE

INGREDIENTS

for stuffing
mozzarella cheese grated   2 tbsp
Parmesan cheese 2 tbsp
pepper  pdr.  1 tsp or to taste
chilli flakes  1/2 tsp or to taste
mixed herbs  1/2 tsp
mix all together

for dough
all purpose flour/ maida  1 cup
salt 1/4 tsp
make soft dough
roll out into small circles about 4" in diameter
apply water all around the corner
place filling in the centre, fold into semi-circle, then apply water in the 2 corners, then join the corners together
boil enough water with wee bit of salt & 1 tsp of oil
place the prepared stuffed dough
once it rises to the top, means it is cooked, drain it

for pesto
oil  1tsp
garlic chopped finely  1 tsp
chilli flakes  1/2
capsicum  2 tbsp
carrot boiled and chopped 2 tbsp
zucchini  cut  2 tbsp
cherry tomatoes  6-8
salt to taste
pepper pdr. 1 tsp
oregano 1 tsp
pesto sauce 1/2 cup

METHOD
heat oil, add garlic, saute for a minute, add capsicum, saute for another minute
add zucchini, saute for 2 minutes, add carrot, cherry tomatoes, pepper pdr., oregano, salt mix
after 2 minutes, add pesto sauce, mix well, add the boiled stuffed pasta, let it cook on low flame for 2-3 minutes, till the sauce gets mixed well with the pasta.
serve hot

ps- if you don't have pesto sauce, you may use any tangy sauce of your choice.
