INGREDIENTS
chickpeas or garbanzo canned beans 450- 500 gm ( 15 ounces)
ripe avocado 1 large
fresh cilantro/ coriander leaves chopped 1/4 cup
green onion 2 tbsp chopped
lime juice 2-3 tsp
Salt and pepper, to taste
Fresh spinach leaves or lettuce, tomato slices, sprouts, etc.
METHOD
Rinse and drain the chickpeas.
In a medium bowl, using a fork or potato masher smash the chickpeas and avocado together. Add in cilantro, green onion, and lime juice.
Season with salt and pepper, to taste.
Spread salad on spinach/ lettuce leaves, serve with tomato slices & sprouts.
