PEAS SPICY FRIED MODAK

INGREDIENTS

for stuffing
oil  1 tsp
ginger- green chilli paste  2 tsp
hing  1/4 tsp
turmeric pdr.
peas 1 cup
salt to taste
coriander leaves finely chopped  1 tbsp
coriander pdr.  1 tsp
cumin pdr.  1 tsp
crushed nuts  2 tbsp

for covering
maida   1 cup
fine semolina   2 tbsp
corn flour   2 tbsp
salt little
ghee  2 tbsp

oil for frying

METHOD

heat oil, add ginger-chilli paste, saute, add hing, saute for a minute
add peas, turmeric pdr., coriander pdr., cumin pdr., salt, 1 tbsp water, mix well
cover & cook on low flame for about 3-4 minutes till peas get cooked, crush the peas well
add crushed nuts, coriander leaves, mix well. remove & cool.

for covering- add dry ingredients, mix well, add ghee, mix well, then add enough water to make a soft dough
roll out small puris, put stuffing, cover from all sides, like modak
deep fry in hot oil till golden brown.
