INGREDIENTS
unsweetened cocoa powder 1/2 cup
boiling water 1/2 cup
sifted flour/ maida 2 1/4 cups
baking soda 1 1/2 tsp
salt 1/4 tsp
unsalted butter, at room temperature 3/4 cup
sugar 1 3/4 cups
vanilla essence 1 tsp
eggs 2
sour cream 1 1/3 cups
METHOD
preheat oven to 350°F. Grease and flour round cake pan
whisk together cocoa and boiling water until smooth.
In a medium bowl, whisk together flour, baking soda and salt.
In a large bowl, using an electric mixer, beat together butter, sugar and vanilla until well-blended (mixture will be dry).
Add egg one at a time, beating well on medium speed after each addition.
Reduce speed to low and beat in flour mixture in 3 parts alternately with sour cream, beginning & ending with flour, just until blended, scraping bowl when halfway done.
Add cocoa mixture and blend. Spread the mixture evenly in the prepared pan,
Bake cake for 30 minutes or until a tester inserted near centre comes out clean.
Cool cake on rack for 20 minutes.
You can serve it warm/ cold, with icing if preferred ( I never like icing/ frosting, so I omit it totally, as it just adds to more calories !)
