INGREDIENTS
white & yellow pumpkins 200 gm each cut into thin slices about 3" long
green chillies 3-4 or to taste
coconut milk 1/2 cup
small white beans/ karamani 50 gm ( pressure cook it with just enough water till soft)
salt to taste
coconut 1 small katori
coconut oil 1 tsp
curry leaves 1 sprig
METHOD
grind together coconut & green chillies with wee bit water & keep aside
in a pan, add pumpkins, little water, salt & cook till soft
you may add karamani, just enough water, soak it overnight
to cook it add in a pressure cooker, add the cut pumpkins, cook for 2-3 whistles
open when the pressure is released, add salt, ground paste, bring to a boil, add coconut milk, as soon as it comes to a boil, remove, add coconut oil, chopped curry leaves, cover it, to retain the flavour.
NOTE- some people don't add beans/ karamani, but I prefer it, don't add coconut oil, as I prefer to avoid coconut oil as far as possible.
