INGREDIENTS
for filling
dates 8-10 de-seeded & chopped into small bits/ crushed
coconut grated 1/2 cup
almonds, cashew, pistachios crushed 1/4 cup
peanuts roasted & crushed 1/4 cup
castor sugar 1/4 cup
cardamom pdr. 1/2 tsp
sesame seeds roasted 3 tbsp
mix all well together
for covering
maida/ all purpose flour 200 gm
milk 3-4 tbsp
ghee/ clarified butter 1 tbsp
salt a pinch
knead all together with water to make a soft dough
in about 2 tbsp of dough add saffron pdr., knead well, so you get a lovely yellow colour
oil for frying
METHOD
take small portion of the dough roll to make about 4 cm circle, take a small portion of yellow dough, roll into long, thin strip, cut into half, keep it across the rolled dough to make a plus sign, then roll it lightly, as this will give a nice design when you fry modak !
put the filling in the middle of the dough, bring together from corner little by little to form a nice design. when all are made, fry in medium hot oil till brown, drain.
this will last for at least a week, if it lasts that long !
