MOONG DAL PANCAKE STUFFED WITH COTTAGE CHEESE

Ingredients for the batter
whole green Moong dal    2 cups
whole white urad dal   1/2 cup
ginger    1 "
green chillies 4-5 or to taste
Salt to taste
Ingredients for the Filling
Grated Paneer/ cottage cheese 250 gms (about 1 cup)
finely chopped onions   1/2 cup
finely chopped tomatoes   1/2 cup
chopped coriander leaves   1 tbsp
chaat masala for seasoning
salt & pepper pdr to taste- see note for alternatives for filling
oil for frying

Method
1. Soak the green whole moong dal and urad dal together for at least 6 hours.
2. Grind dals along with green chillies and ginger into a smooth batter adding just enough water to grind. The consistency of the batter should be that of a pancake.
3. Combine all the ingredients for the filling mixture. Keep aside.
4. Heat a skillet/tava and pour a ladleful of batter in circular fashion from centre going outwards. Drizzle oil/ghee around the pancake. Allow the pancake to cook on medium heat. You will notice brown spots appearing inside and around the sides. Let it get crisp and then flip and cook for about a minute or 2.
5. Remove from the skillet, place it on a platter with the bottom side facing down. Fill about 2-3 tbsp of paneer filling in the middle of the pancake and fold it lengthwise tightly. Cut the roll diagonally into 2 or three pieces  and sprinkle more chaat masala.
7. Serve hot along with mint coriander chutney or tomato sauce or any other chutney of your choice.

NOTE-you may slight fry onion, tomatoes, with seasoning of your choice, add cottage cheese, cook & fill.  OR
you can have some mushroom, carrot, spinach stuffing with your choice of seasoning.
