SEV-VEGETABLE STUFFED KACHORI AND OTHER VARIETIES

INGREDIENTS
for stuffing
oil   1 tsp
onion finely chopped  2 tbsp
capsicum finely chopped   2 tbsp
carrot grated   2 tbsp
salt to taste
oregano  1/2 tsp
chilli flakes  1/2 tsp or chilli pdr.
cheese  2 tbsp
sev well crushed 3-4 tbsp
ketchup 1 tbsp
mixed dry herbs  1/2 tsp

for dough
all purpose flr./ maida  1 cup
corn flour  2 tbsp
salt 1/2 tsp
ghee 2 tsp
oil for frying

METHOD
for stuffing
heat oil, add onion, fry till pink
add capsicum, fry for a minute
add carrot, fry for another minute
add spices, sauces, mix well
remove cool, add cheese, finely crushed sev, if still moist, add some more sev.
for dough - mix all ing. with water to make a soft dough.
roll out dough to about 4" diameter, put stuffing about 2-3 tsp., close it well from all sides
lightly flatten it, deep fry in hot oil, if too hot, then fry in medium flame till brown on all sides.
drain, serve hot with mint/ green chutney & sweet chutney


ps- another option for filling is, in oil, fry well, fresh beans, potatoes, season as per your taste, add 1/2 cup of coriander leaves, cool, fill like above & fry.

option 2- for filling- use besan 2 tbsp, salt, chilli pdr. to taste, coriander pdr. 1 tsp, cumin pdr. 1/2 tsp., garam masala/ chaat masala pdr., or combine with some amchur pdr. mix all with a tsp. of oil, mix well for stuffing.roll out small puris, put stuffing about 2 tsp, cover it, then roll it out again without using pressure, as the filling shouldn't come out. fry in hot oil. to serve, lightly break top, put  some potato-onion vegetable, sweet chutney & green chutney on top & a spoon of yoghurt !
