SPICY MANGO QUINOA

INGREDIENTS

quinoa  1 cup
water 1 3/4 cup if cooking in pressure cooker or else 2 cups water to cook
raw mango  grated fine  1 cup
mustard seeds  1 tsp
udad dal  2 tsp
chana  dal  2 tsp
hing/ asafoetida  1/4 tsp
turmeric pdr.   1/2 tsp
salt to taste
fresh ground pepper  pdr.  1 tsp or to taste
red chillies  2
curry leaves 1 sprig finely chopped
coriander leaves finely chopped  2 tbsp
cashew nuts  1 tbsp broken
oil   2 tsp
ghee 1 tsp ( optional)
lime juice 1-2 tsp optional

METHOD

if you're cooking quinoa in pressure cooker , use 1 3/4 cup, cook for 3 whistles or you may need 2 cups water to cook it.
heat oil & ghee in a pan, add mustard seeds, once it crackles, add udad & chana dal, roast it, when light brown, add cashew nuts, fry till light brown
add asafoetida/ hing, red chillies, curry leaves, saute for a minute
add grated mango, turmeric pdr., 2 tsp. of water salt little for it get cooked, keep stirring well
once cooked, add pepper pdr., coriander leaves, add quinoa, add salt to taste, mix well.
you may add lime juice, after you remove from gas, if you prefer
serve hot, garnished with coriander leaves with plain yoghurt/
 raita- mix some finely chopped cucumber with yoghurt, with salt & pepper to taste, or you can combine 2 tsp onion finely chopped, 2 tsp tomato finely chopped with yoghurt & season it. the choice is yours !
