Ingredients
¼ cup dry breadcrumbs
¼ cup grated fresh Parmesan cheese
¼ tsp salt
¼ tsp garlic powder
⅛ tsp freshly ground black pepper
¼ cup skim milk
2½ cups zucchini slices (1/4-inch-thick)
Cooking spray
METHOD
Preheat oven to 425 degrees F.
Combine first 5 ingredients in a medium bowl stirring with a whisk.
Place milk in a shallow bowl. Dip zucchini slices in milk and then in breadcrumb mixture.
Place coated slices on an oven proof wire rack coated with cooking spray; place rack on a baking sheet.
Bake for 20-30 minutes or until browned and crisp.
ps- be careful, as the time can vary from oven to oven, so any time after 15 minutes, you'ld keep a watch.
