GREEN KACHORI

INGREDIENTS

for filling
beans finely cut & blanched  1/4 cup
peas blanched, mashed   1/4 cup
coriander leaves chopped   1/2 cup
lime juice   2-3 tsp
salt to taste
chilli-ginger-garlic paste 1 tbsp
coconut grated   1/4 cup
sugar 2 tsp ( optional)

for dough
maida/ all purpose flour    1 cup
corn flour 2 tbsp
ghee  2 tsp
salt  1/4 tsp
water to mix


oil for frying

METHOD

for filling, put beans, peas,  1 tsp oil, mix well, micro high for 5 minutes covered.
remove,  add the paste, mix well, cover & micro high for 2 minutes
add coconut, mix well, micro high for 2 minutes
cool, add coriander leaves, lime juice & sugar, mix well.
make dough with all the ingredients, like soft roti dough.
roll out small puris, roughly 4" in diameter
put 2-3 tsp. of filling, bring together from all sides, seal well, if any excess dough, remove, mix with rest of the dough. make all kachoris in the same way, lightly flatten them
deep fry in hot oil, if oil gets too hot, reduce to medium heat.
remove once light brown.
serve hot with any green chutney or sweet chutney.
