Ingredients
2 cups apples, peeled and finely diced
1 cup brown sugar
1/4 cup oil
1 egg, beaten
1 cup rice flour
1 1/2 tbsp cornflour or arrowroot flour (paniphal)
1 tsp powdered cinnamon
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla essence
1/2 cup walnuts, chopped
Oil to greasing cake tin
1 cup brown sugar
1/4 cup oil
1 egg, beaten
1 cup rice flour
1 1/2 tbsp cornflour or arrowroot flour (paniphal)
1 tsp powdered cinnamon
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla essence
1/2 cup walnuts, chopped
Oil to greasing cake tin
Method
Place apples in a bowl, cover with sugar and stir. Let it stand for at least 30 minutes.
Preheat oven to 180 degreeC/350F/gas mark 4 and grease an 8" cake tin.
Mix remaining ingredients into bowl containing apples, in the order given. Stir well.
Spoon batter into lightly greased cake tin.
Bake in preheated oven for 35-40 minutes.
If a skewer/ toothpick inserted in the centre comes out clean, it means the cake is done.
Or else, bake for a few minutes longer, if required. Turn out onto a wire rack to cool.
NOTE- slice apples and arrange them on top of cake before baking, OR you can place apple slices arranged at the bottom, then pour the batter & bake.
To serve, if you place apple slices at the bottom, turn the cake upside down to serve.
Those who have too sweet tooth, may top with some sweetened cream.
