PICKLED COTTAGE CHEESE ( ACHARI PANEER)

INGREDIENTS
bay leaf 1
cumin  1 tsp
capsicum  1/4 cup chopped
cottage cheese/ paneer  200 gm chopped
ginger-garlic paste  2 tsp
kasturi methi ( dried fenugreek leaves)   1 tsp
tomato puree  1/2 cup
water  1/2 cup
cumin pdr.  1 tsp
green chilli paste
mango pickle paste  1 tsp
fresh coriander leaves   2 tbsp

METHOD
heat oil in a pan, add bay leaf & cumin, saute for a minute
add capsicum , ginger-garlic paste, green chillies, saute for 2 minutes,
add paneer, saute for another minute
then add tomato puree & water, salt to taste mix well
add cumin pdr., kasturi methi, coriander leaves 1 tbsp, mix well
let it boil & thicken
add mango pickle paste, mix well
remove, serve hot garnishing with coriander leaves
this will go well with rice, pulao, roti, bread
