INGREDIENTS
kasturi methi 3 tbsp
oil 2 tbsp
onion 2 big, grated fine or chopped very fine
salt to taste
tomato puree 3 tbsp
red chilli pdr. 1/2 tsp or to taste
sugar 1/2 tsp
paneer/ cottage cheese 400 gm cut into 2"
METHOD
rinse methi leaves in a fine colander/ strainer, then soak in a cup of warm water for 30 minutes.
in a frying pan, heat oil, add onion & wee bit of salt, saute till light brown
squeeze out the water from the soaked leaves, add to onion, fry on low heat for 2-3 minutes
add tomato puree, cook on medium flame till oil floats on top
add red chilli pdr., sugar, stir for a couple of minutes
add 1/4 cup of water, wait for it come to a boil
add paneer pieces, salt to taste
cook on low flame, stirring occasionally, till paneer is well coated with the masala.
remove, serve hot garnishing with some finely chopped coriander leaves
this will go well with rice, roti, breads.
