EGGLESS ORANGE FLAVOURED CAKE

INGREDIENTS

butter  60 gm
sweetened condensed milk 80 ml
orange rind  1/2 tsp
all purpose flour/ maida  125 gm
baking pdr. 5 gm/ 1 tsp
baking soda  5 gm/ 1 tsp
semolina/suji  40 gm
icing sugar for decoration
orange essence  1 tsp
orange colour if desired few drops (  food colours are carcinogenic, so I prefer to avoid them)
buttermilk  100 ml slightly sour( homemade preferable)

METHOD
in a big bowl, beat well butter & condensed milk, add orange rind, mix well
in another bowl, mix flour, baking pdr., baking soda well, then add roughly 30 gm semolina, mix
mix the dry ingredients with butter, condensed milk well
add roughly 1/3 of the butter milk, beat well
add another 1/3 of the butter milk, beat well
then add rest or add little less, as depending on the semolina, how fine it is, you may need the entire buttermilk or slightly less.
the batter should be of pouring consistency, so beating well is very essential, not necessary to use an electric beater.
pour the batter in a well greased & lined with butter paper both at the bottom & sides
sprinkle rest of the semolina on top of the batter, tap it to level well
bake in preheated oven at 160 deg. C for roughly 30 minutes, or till the top is light brown, a toothpick inserted in the middle comes out clean.

to serve, take out , cut the top flat, then turn it upside down, then if you've design paper, place it on the cake & dust the icing sugar , remove the paper, cut & serve.
if no design paper, no problem, simply dust icing sugar on top, which again is optional, or you may put some nuts, cherries on top & serve.

ps- timing can vary from oven to oven.

tip- instead of orange rind, you can use lemon rind, then use lemon essence or pineapple essence with it.
