Potato Skins - chips?

If you spent time peeling potatoes, don’t let the skins go to waste. Fry them, or roast them in the oven for delicious, crunchy chips. As you all know the nutrients are in the skin or closer to it, that's why they say cut with the skin most of the vegetables.
