Ingredients:
For the cake:
600g biscuits (any type you prefer, such as digestive biscuits or graham crackers)
120 gm sugar
60 gm cocoa powder
250ml milk
60 gm butter
A pinch of vanilla extract
For the glaze:
100 gm dark chocolate
130 ml heavy cream (33% fat)
Instructions:
Prepare
a round cake pan or a rectangular baking dish by lining it with
parchment paper or plastic wrap, leaving some overhang on the sides for
easy removal.
Crush the biscuits into small
pieces. You can do this by placing them in a plastic bag and using a
rolling pin to crush them, or you can pulse them in a food processor
until you get coarse crumbs.
In a saucepan,
combine the sugar, cocoa powder, milk, and butter over medium heat. Stir
continuously until the mixture is smooth and the butter is melted.
Remove from heat and stir in the vanilla extract.
Add the crushed biscuits to the chocolate mixture and stir until well combined and all the biscuits are coated.
Transfer
the mixture to the prepared cake pan or baking dish and press it down
firmly and evenly with the back of a spoon or spatula.
To
make the glaze, chop the dark chocolate into small pieces and place
them in a heatproof bowl. Heat the heavy cream in a saucepan until it
just starts to boil, then pour it over the chopped chocolate. Let it sit
for a minute, then stir until the chocolate is completely melted and
the mixture is smooth.
Pour the chocolate glaze over the biscuit cake, spreading it out evenly with a spatula.
Refrigerate the cake for at least 4 hours, or until set.
Once
set, use the overhanging parchment paper or plastic wrap to lift the
cake out of the pan. Place it on a serving plate and slice into pieces.
Serve chilled and enjoy your delicious no-bake chocolate biscuit cake!
