Vegetable pancake

This pancake is quite different from the usual pancake that we make, more batter, less veges. This has loads of veges, you can use whatever veges the family likes cut into strips. For 2 1/2 cups of cut veges- spring onion,zucchini, sweet potato, onion, chilies, carrot, mushroom, potato etc only 3/4 cup flour, salt to taste. Just enough water to make a thick batter, just enough to mix all.

You can make small pancakes and serve with dip of your choice or chutneys/ ketchups. You can shallow fry with oil on medium low flame till crisp on both sides.
