Semia nest with lacha rabri

INGREDIENTS

for nest

2 cups roasted semia crushed

1/2 cup condensed milk

mix both well.

take a round cutter- keep it on a plate, put the mixture till about 1/4 of the cutter, press well, make a depression in the center,  keep it in the fridge to set

For rabri

milk 1 liter

sugar 1/3 cup

METHOD

In a big kadai, boil the milk, once it starts to boil, simmer the gas, as malai/ cream forms on top, with a ladle push the cream to the sides of the kadai, as malai keeps forming, keep pushing to the sides, at the same time stir the milk also or else it will stick down and brown.

once the milk has reduced to 1/3rd of its quantity, add sugar, it will get watery, keep stirring till it get thick.

once thick, remove and cool. Remove the malai that has formed on the sides, keep separately, it is called lacha, helps to put on top of rabri on the nest. decorate with nuts and little milk in which saffron is soaked.
