At times, we do have left-over rotis, no one likes to eat it plain. Best way is to add some more veges and added tastes and then it can be rolled and enjoyed by the family.
INGREDIENTS
oil 2 tbsp
onion chopped 1
tomatoes chopped 2
tomato puree 1/2 cup
turmeric pdr 1/2 tsp
red chili pdr 1/2-1 tsp as per taste
roasted jeera pdr 1/2 tsp
dhania pdr 1 tsp
garam masala pdr 1/2 tsp
green capsicum chopped 1
paneer crumbled 300-400 gm or as needed
salt to taste
to assemble
roti
mint chutney 2 tbsp mixed with 1/2 cup curd
sliced onion 1 small
chaat masala
PREPARATION
in a pan heat oil, add onion, fry till light brown adding wee bit of salt
add tomatoes, fry till soft,adding some water, once soft
add tomato puree, cook for 3 minutes, adding the dry masala pdr
add capsicum, paneer, salt to taste, add little water, cook for 10 minutes
add some chopped coriander leaves ,mix well.
on a roti spread the curd mint chutney mixture well,
put enough veges in a corner, add some sliced onion to which little salt is mixed
sprinkle chaat masala, put some chopped mint leaves, roll tightly, slice it and serve.
If you're taking it for picnic, then avoid using curd with mint chutney, just use mint chutney.
roll it tight in a paper napkin, to eat like frankie !
