Corn kachoris

INGREDIENTS

for filling

corn 1 1/2 cup blanched

fennel seeds 1/2 tsp

onion 1 cup

green chilies to taste

coriander leaves 1 tbsp

ginger 1" finely chopped

oil 2 tbsp 

salt to taste

for covering

maida = atta mixed 1 1/2 cups

fine rava 1/4 cup

butter/ ghee 1 tbsp

salt to taste


Oil for frying


METHOD

in a pan, heat oil, add fennel seeds, once it crackles, add ginger, green chilies fry for a minute

add finely chopped onion with wee but salt to fry till transparent

add corn salt to taste let it cook for 2 minutes covered

 lightly mash the corn, add coriander leaves, mix well, remove and cool

make a tight dough using the ingredients of covering, let it rest covered for 10 minutes.

take lemon size balls, flatten with your hand or roll into small puris, put enough stuffing, seal well

roll this into a thick puris, fry in medium hot oil, till golden on both sides.

drain and serve with chutney of your choice.
