Very often, we hear or read that even chefs and other culinary experts saying to add lime juice when the dish is still on the gas.
Vitamin C is so fragile, that it loses its effect/ nutrients if added on the gas, hence always add lime juice, preferably after taking off from the gas or just before serving.
