SPICY STUFFED BUNS

INGREDIENTS

for stuffing
oil  2 tbsp
jeera/cumin  1/2 tsp
chilli-ginger-garlic paste   1 tsp
onion finely chopped  2 tbsp
corn boiled and mashed coarsely   1/2 cup
chilli pdr  1 tsp
turmeric pdr  1/4 tsp
lime juice  1 tsp
grated  carrot   2 tbsp
salt to taste

stuffing for green chillies
roasted crushed peanuts  1/ 4 cup
coconut powder or dried copra finely grated   2 tbsp
sugar  2 tsp
salt  to taste
sesame seeds/ til   1 tsp
lime juice  1 tsp
green chillies deseeded    8-10
butter  1 tsp
mix all the ing. till green chillies, stuff them in chillies
add butter in a micro safe dish, melt the butter, add the stuffed chillies, mix well, micro high for 25 seconds  OR melt butter in a pan, toss the chillies for 2-3 minutes well, remove

buns as needed, cut into halves, buttered as required
cucumber slices or grated  1/2 cup
tomato slices as required
grated cheese

in a pan, heat oil, add jeera, once it browns, add the paste, onion, wee bit of salt fry well
add corn, chilli pdr, turmeric pdr, cook for 3 minutes
add carrot, salt to taste, cook  for 5 minutes till the mixture is dry, add lime juice and finely chopped coriander leaves, mix well, remove

to assemble
spread the stuffing lightly all over, cucumber, tomato pieces, cheese, cover
serve with the stuffed green chillies   OR you can toast bread slices, spread the stuffing and eat with stuffed chillies. you can also spread if too hot some sweet chutney !
