MALAYSIAN STYLE RICE

INGREDIENTS

diced red capsicum  1
chopped red onion  1
celery finely chopped  2 sticks
limes  2
chilli paste- 1 tsp ( fresh red chillies pounded with 2 cloves garlic)
rice cooked & cooled  450 gm
peas  80 gm
light soya sauce
spring onions chopped  2
tomatoes chopped  2
potatoes boiled & mashed well with wee bit of milk while hot  1/2 cup( instead of eggs)
salt to taste

METHOD

in a large pan/ wok, heat oil  2 tbsp, stir fry tine onion, capsicum, celery on high heat until soft
add the chilli mix, soya sauce, cooked peas
add potato mixture/ eggs beaten & stir fry quickly till you get a scramble
add the cooked rice & toss until warm
check & adjust the seasoning
serve with spring onion sprinkled on top
serve cucumber, tomatoes & lime wedges on the side.
