Ingredients
all-purpose flour/ maida 2 cups
brown sugar 1 1/2 cups
baking pdr 2 tsp
salt 1/4 tsp
eggs 2
rum extract 1 tsp
sliced peaches, no sugar added, diced and liquid reserved 14 1/2 ounce can 210 gm
Maraschino cherries 1/4 cup chopped, plus more for garnish
Whipped topping for garnish
Method
Preheat oven to 350 deg F/ 180 deg. C.
Coat a baking dish with cooking spray.
In a large bowl, combine flour, sugar, baking powder, and salt.
Stir in eggs, rum extract, peaches with reserved liquid, and cherries; mix well.
Spoon into prepared baking dish.
Bake 30 to 35 minutes or until toothpick comes out dry.
Let cool. When ready to serve, add a dollop of whipped topping and a cherry.
