onion chaat

ingredients

onion 6-8 slit till half way through
onion 1 medium chopped fine
tomatoes chopped fine  1/2 cup
red chilli  1 chopped fine
chilli-ginger-garlic paste  2 tsp
chilli pdr, coriander pdr., garam masala pdr. all 1/2 tsp each
sugar  2 tsp
water roughly 1- 1/2 cups
cashew nuts  1/4 cup
ghatia to serve with chopped coriander leaves
oil  3 tbsp
bay leaf/ tej patta  1

method
heat 1/2 tbsp oil, fry the slit onions in medium flame till light brown, remove and keep aside
heat 2 tbsp oil again, add bay leaf, red chilli, chilli-ginger-garlic paste fry well, add onion fry till onion is transparent, add tomatoes, all the powders, fry till tomatoes are well cooked
add first 1 cup water, let it simmer for 2-3 minutes, add fried onion, cashew nuts, sugar add more water, cover the pan, let it simmer for 5-7 minutes, or till oil floats on top.
remove, add ghatia or big sev, coriander leaves, serve at once.
