Chicken/ Veg. Sub. with Tomatoes and Mallow

 If you're looking for a great vegetarian alternative to chicken, tofu, tempeh, seitan and mycoprotein-based products like Quorn are some of the best options. High in protein and incredibly versatile, they can be marinated, grilled or fried to replicate the texture and taste of chicken.

Portobello mushrooms can be used in place of a grilled chicken breast, while creminis and shiitakes are great for stir-fries and creamy pastas.  

 Mallow health benefits

Ingredients for 4 servings

1 tbsp olive oil or vegetable oil 
 
4 pieces chicken breast (about 500 grams) OR use substitutes mentioned above
 
1 garlic clove finely chopped 
 
½ tsp dried oregano 
 
½ tsp salt 
 
¼ tsp pepper pdr
 
¼ cup dry white wine or water *
 
2 sliced tomatoes 
 
170 grams of mallow leaves (about 3 ½ cups)

Preparations
 
1. Heat the oil in a non-stick skillet over medium heat.
 
 2. Sprinkle the pieces of chicken breast/ Substitutes with garlic, oregano, salt, and pepper and place them in the skillet. 
 
3. Fry the chicken for 15-20 minutes, be sure to turn the meat at least once. 
 
4. Add the wine/water and the sliced tomatoes to the pan and continue cooking with a lid. 
 
5. After 2-3 minutes of cooking the tomatoes, add the mallow leaves, cover the pan again and continue cooking for 2-3 minutes or until the mallow softens. 
 
6. Take both the chicken and the veggies off the heat, arrange on a plate and eat away!

*Wine substitutes can include grape juice, cranberry juice, pomegranate juice, stock, or even vinegar mixed with water, depending on whether it's for drinking or cooking, and what flavor profile you want to achieve. For cooking, consider broth for savory dishes or fruit juice with a splash of vinegar to mimic the acidity and depth of wine.
