PLUM CAKE

INGREDIENTS:

2 large eggs

¾ cup sugar

1 ⅔ cups all-purpose flour

1 creamy yogurt

⅓ cup vegetable oil

½ packet baking powder

4 ripe plums, thinly sliced

Powdered sugar, for dusting (optional)

 

METHOD:

In a large bowl, beat the eggs with the sugar until light and fluffy.

Add the vegetable oil and yogurt, mixing well to make a smooth, creamy batter.

Sift together the whole wheat flour and baking powder to prevent lumps from forming.

Gradually add the sifted dry ingredients to the egg mixture, stirring gently until the batter is smooth and well combined.

Wash and cut the plums into thin slices, removing the stones. Set the slices aside.

Preheat the oven to 180°C (350°F).

Lightly butter and flour an 8-inch cake mold or round baking pan.

Pour the prepared batter into the mold, smoothing the top with a spatula.

Gently arrange the thin plum slices on top of the batter, overlapping them slightly. Sprinkle the plums with a small amount of granulated sugar to add sweetness.

Place the cake in the preheated oven and bake for about 40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Keep an eye on the cake as it bakes to make sure it does not darken too quickly. If necessary, cover the cake with aluminum foil during the last 10 minutes of baking.

Once baked, remove the cake from the oven and allow it to cool completely in the pan on a wire rack.

Once cooled, dust the surface with powdered sugar for a decorative touch and added sweetness.
