Ingredients
For dressing
¼ cup extra virgin olive oil
3 tbsp red wine vinegar
garlic 1 clove minced
dried oregano 1/2 tsp + more for garnishing
1/2 tsp Dijon mustard
1/4 tsp sea salt
black pepper pdr to taste
For the salad
Cucumber 1 cut lengthwise, seeded and sliced 1/4" thick
green capsicum chopped 1
cherry tomatoes halved 2 cups
feta cheese cut int 1/2" cubes 140 gm ( goat cheese, ricotta OR cottage cheese)
red onion thinly sliced 1/3
Preparations Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper. On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.
You can serve this spicy pineapple chutney with paratha to complete the meal.
