1 medium fresh pineapple, peeled, cored, and diced
2-3 fresh jalapeños, seeded and minced (adjust based on your heat preference)
1 small red onion, finely chopped
1/4 cup apple cider vinegar
1/4 cup brown sugar
1 tsp ginger pdr
1 tsp cumin pdr
1/2 tsp salt
1/4 tsp black pepper pdr
Optional: 1 tablespoon lime juice (for that extra tanginess)
Preparations
To create a vibrant and flavorful Spicy Pineapple Jalapeño Chutney, begin by heating a medium saucepan over medium heat. Add the finely chopped red onion and sauté until they are translucent. This usually takes about 3-4 minutes. Next, incorporate the diced pineapple and minced jalapeños into the pan. Stir them well to combine.
Now, pour in the apple cider vinegar and sprinkle the brown sugar, ground ginger, ground cumin, salt, and black pepper over the mixture. Allow this medley to simmer for 15-20 minutes, stirring occasionally. The chutney will thicken and the flavors will meld beautifully.
For an extra tangy kick, you may add lime juice just before removing it from the heat. Once done, cool it to room temperature. This chutney pairs wonderfully with dishes like grilled paneer wraps, with puris, dosa, idli, parathas, bread toast.
