In a bowl, mix maida with 2 tsp of ghee until well combined.
Slowly, add required amount of water and knead the dough and cover it for sometime.
Heat a pan and add 1 tsp ghee in it. Once heated add milk powder and milk, mix it well.
Add sugar and chopped dry fruits to it. Mix well until well combined.
Add saffron strands and cardamom powder and continuously stir it till it becomes a soft mixture.
Keep the mixture aside and allow it to
cool completely. Make equal portions of the dough as well as the
stuffing.
Grease your palm with ghee and make a
bowl like shape from the dough and put the mawa stuffing in it.
Close it from all the sides and roll it into a small disc.
Deep fry all the discs in oil till
slightly brown on either sides and allow it to cool completely.
Prepare the sugar syrup by adding 1 cup
of water, 1 cup of sugar and 1/4 tsp of cardamom powder in a vessel
along with a few strands of saffron.
Allow it to boil on medium flame until
the quantity reduces and it turns into 1 strand consistency.
Dip the kachoris in the prepared sugar syrup for 1 minute and then take it out.
The shahi mawa dry fruits kachoris are
ready to serve. Garnish it with chopped pistachios, saffron strands and
dried rose petals.
