Spinach paneer Samosa

 Ingredients

spinach blanched, chopped and squeezed out well 1 cup

paneer 200 gm grated

salt to taste

cumin pdr 1/2 tsp

amchur pdr 1/2 tsp

ginger finely chopped 1 tsp

oil 1 tsp + frying

garam masala 1/2 tsp

chili pdr to taste

For covering

you can buy samosa patti from Irani shops OR make dough like for roti with maida/ whole wheat flour, adding salt, oil, ajwain  to a smooth dough. 

Roll out the dough into rounds, cut into half, shape into cones, use slurry to seal.

 

Preparations

In a pan, add oil, add gingery fry for a minute, add spinach, fry for another minute, add spices, fry for 2 minutes, add grated paneer, fry for a minute, remove

If using ready-made sheets, put stuffing in a corner, start folding into a triangle and last seal with maida slurry well.

If using dough, roll out into a medium round or oval shape, cut into half

Shape into a cone, put enough stuffing, seal the edges well with slurry

fry in medium hot oil till brown and crisp , drain, serve hot with ketchup or mint chutney.
