Ingredients
2 cups finely ground almond flour
1½ tsp baking powder
½ tsp salt
¼ cup coconut oil (solid) or melted butter
4 large eggs
⅓ cup maple syrup (or honey)
1 tsp vanilla extract
1 peeled, cored, and grated or finely diced apple (about 1 medium)
Preparations
preheat the oven to 350 °F and grease a 9″ round cake pan lined with parchment
whisk almond flour, baking powder, and salt.
add coconut oil and rub it into the dry mix until sandy/ crumbly
beat in eggs, maple syrup, and vanilla until well combined.
gently fold in the apple pieces until evenly distributed.
pour batter into the pan, smooth the top, and optionally sprinkle sliced almonds.
bake for about 30 minutes or until a toothpick comes out clean, with a lightly golden top
cool on a rack and dust with powdered sugar before slicing.
Options
swap coconut oil for melted butter or olive oil for richer flavor
sometimes use grated apples or diced for different textures.
add a pinch of cinnamon or almond extract to boost flavor.
