INGREDIENTS
capsicums 6 medium size
For stuffing
cottage cheese/ paneer 1 cup crumbled
green peas boiled 1/4 cup
cheese grated 1/2 cup
cumin/ jeera 1/2 tsp
chilli pdr. 1/2 tsp or to taste
green chillies finely chopped 1/2 tsp or to taste
coriander leaves finely chopped 2 tbsp
oil as needed
salt to taste
FOR gravy
tomatoes chopped 1/2 cup
onion chopped 1/2 cup
garlic crushed 6 cloves
ginger grated 1/2 "
cumin/ jeera 1/2 tsp
chilli pdr. 1/2 tsp or to taste
fresh cream 2 tsp
oil as needed
salt to taste
METHOD
cut the tops of the capsicum & scoop out the centres.
in boiling water drop the capsicums & remove after few minutes, drain & keep aside.
heat oil in a pan, fry cumin for a minute, add all the stuffing ingredients except cheese & cook for few minutes. keep aside.
combine tomatoes, onion, ginger, garlic with little water & cook in a low flame till the tomatoes are soft, cool completely, blend to a smooth puree. keep aside.
heat oil in a pan, add cumin, once it crackles, add the puree, chilli pdr., salt & cook for 5-7 minutes, add cream & simmer for another 2 minutes. keep aside.
stuff the capsicum with the stuffing, arrange them on a greased baking dish
pour the gravy on top, garnish with grated cheese, bake in a hot oven at 200 deg. C for 10 minutes.
serve hot with rice, bread/ roti.
