METHI-POTATO PARANTHA

INGREDIENTS

for stuffing

methi leaves washed & finely chopped   1/2 cup
potatoes cooked, peeled, mashed    2 cups
salt to taste
coriander-cumin pdr.  2 tsp
chaat masala pdr.  1/2 tsp
turmeric pdr.  1/4 tsp

for covering
whole wheat flour   2 cups
salt  1/2 tsp
water as needed to make dough
oil/ ghee for shallow frying


METHOD

mix well all the stuffing ingredients, keep aside
make soft dough with flour
make small balls of the dough, roll out little, put 2 tbsp of stuffing, bring together from all sides, roll out again carefully so that stuffing doesn't come out
heat a tava/ griddle, cook the parantha well on both sides till brown, adding ghee/ oil
remove, serve hot with any vegetable pickle or vegetable raita to make a complete meal
