Thyme berry sorbet


Ingredients

fresh strawberries   500 gm
sugar  150 gm or to taste
lemon 1
slat a pinch
fresh thyme   15 sprigs ( 30-35 gm)
water  60 ml

METHOD
rinse & clean the strawberries
remove the leaves & slice it into quarters, place in a bowl
add 1/2 of the sugar, salt & lemon juice.
let it rest in the refrigerator
in the mean time, place rest of the sugar, thyme sprigs & water in a pan
place this on fire & heat it gently for 5 minutes without allowing it to boil,
slightly cool this liquid & pour it on the srawberries.
let it stay in the refrigerator for an hour
then blend this to a fine puree
strain & churn the mixture well.
