INGREDIENTS
knol khol peeled and cut into small pieces 2 cups
turmeric pdr. 1/8 tsp ( optional)
salt to taste
oil 1 tsp
mustard seeds 1/2 tsp
udad dal 2 tsp
coconut grated 2 tbsp ( optional)
red chillies 1-2
METHOD
in a pan, heat oil, add mustard seeds, once it crackles, add udad dal & red chillies, once the dal turns light brown, add the cut vegetables, turmeric pdr., roughly 2 tbsp of water, mix well, cover and cook for roughly 5 minutes, stirring well once in between.
if at the end of 5 minutes, if knol khol is cooked well, add salt and grated coconut, mix well, if not cook for few more minutes.
serve this hot with rice and sambar/ rasam/ roti
ps- option, instead of adding grated coconut, you can grind coconut with 1/2 tsp cumin, 1 green chilli and add to the cooked vegetable, stir well for 2 minutes and serve hot, this tastes even better than the earlier recipe ! you then need not add dry red chillies in the beginning.
