Coated Coconut balls in sugar syrup

INGREDIENTS

grated coconut   200 gm
khoya/mawa   200 gm
sugar/date palm jaggery   2 1/2 cups
maida  150 gm
water 5-6 cups
ghee 40 gm
sodium bicarbonate  1/8 tsp

METHOD
make sugar syrup by heating 2 cups sugar with 4 cups water, allow it to cool
fry the coconut, khoya & 2 tbsp of sugar together in a pan over medium flame, stirring continuously.
to make cakes, roll the mixture into balls, flatten them between your palms.
make batter by mixing flour, remaining water, sodium bicarb & 1 tsp of hot ghee
heat ghee & coat coconut balls in the batter & deep fry till golden brown, drain & soak in sugar syrup.
