INGREDIENTS
for stuffing
cottage cheese/ paneer 1/2 cup grated
cheese grated 1/2 cup
onions 2 finely sliced, fried slightly in oil
salt to taste
green chilli paste 1 tsp
ginger-garlic paste 1 tsp
fresh coriander leaves finely chopped 3 tbsp
garam masala pdr. 1/2 tsp
for covering
whole wheat flour/ atta 2 cups
salt 1/4 tsp
water as needed to make dough
oil 1 tsp
ghee/ oil for shallow frying
Tomato chutney
tomatoes 2 pureed
salt to taste
chilli pdr. 1/2 tsp
cumin pdr. 1/2 tsp
mix all well & boil till thick
METHOD
mix all the ingredients of stuffing well
mix flour, salt, well, add water to make a soft dough, add oil, knead again till soft
take a small ball of the dough, roll out to a roti, apply tomato chutney, spread the stuffing on one-half of the roti, fold to form a semicircle, press well the corners, you may press well with fork all around to seal & make a design.
heat a tava/ griddle, cook the stuffed parantha on both sides till well brown, applying oil/ ghee as needed, cut into half with a pizza cutter & serve hot with any chutney and vegetable raita to make a complete meal.
