a healthy papaya salad

Ingredients

shredded green papaya   4 cups
roasted unsalted peanuts   4 tbsp
peeled garlic  4 cloves
green chillies 2 or as per taste
palm sugar  1 piece
cherry tomatoes  10
juice of 1 lime or to taste
water  2 tbsp

METHOD

crush peanuts with mortar or in a mixie for few seconds, keep aside.
melt palm sugar in a small pan at medium heat, adding 2 tbsp of water. it should form a shiny & thick syrup.
peel the papaya & shred into thin strips, soak it in cold water, while you prepare rest of the salad.
slice the green beans into 1"pieces. 
take the chillies, garlic peeled, crush them gently with the mortar & pestle. add the crushed peanuts, keeping aside about 1 tbsp of crushed peanuts aside, mix well.
add the shredded papaya & crush lightly, add palm sugar, tomatoes, lime juice, salt to taste. Mix well.
serve in a big bowl, sprinkle the crushed peanuts on top.
