Tomato halwa

Ingredients

tomatoes  4
potato 1 small
sugar  500 gm or less, as per taste
cashew nuts  10
raisins 5 or more
cardamom pdr. a pinch
ghee/ clarified butter  1/2 cup
cashews  2 chopped for garnishing
almonds   3 chopped for garnishing

METHOD

puree the tomatoes
boil & mash the potato
powder the cashew nuts
heat ghee in a pan, add raisins, when they puff up, add the pureed tomatoes & mashed potato, mix well & fry on medium flame for about 5 minutes.
then add the cashew nut powder, fry for another 3-4 minutes
now add sugar, cook till the halwa leaves the sides of the pan
add cardamom pdr, mix well
serve garnishing with chopped almonds & cashews
