Pumpkin Cheesecake Overnight Oats

Ingredients

½ cup rolled oats

½ cup unsweetened almond milk

¼ cup part-skim ricotta cheese

2 tbsp pumpkin puree

1 tbsp pure maple syrup

¼ tsp vanilla extract

tsp nutmeg pdr

1 tbsp graham cracker crumbs

 

Instructions

Combine oats, almond milk, ricotta, pumpkin, maple syrup, vanilla and nutmeg in a small bowl or jar. Cover and refrigerate overnight.

Top with graham cracker crumbs before serving.

Tips

To make ahead: Prepare through Step 1 and refrigerate for up to 5 days.
