Ingredients
besan 250 gm/ 1 cup
rice flour 1/4 cup
potatoes 3 medium / 150 gm
jeera/ ajwain 1 tsp crushed with palms
red chili pdr 1/2 tsp
turmeric pdr 1/4 tsp
hing 1/4 tsp
salt to taste
oil to fry
Method
peel the potatoes, wash well and soak them in water
in a big bowl mix besan, rice flour, salt, red chili pdr, turmeric pdr well, add hing and mix again and keep aside, crush jeera/ ajwain and add to the flours, mix well
wash well and remove the potatoes chop them roughly into small pieces, so it will be easier to make a paste of them
In a mixer jar, add the potatoes, don't add any water, blend to make a fine paste
add the potato paste to the dry ingredients, mix well, knead without adding any water to a smooth soft dough ( in case you need just add a tsp of water to make the dough)
grease the kara sev or any shape press you've, grease inside well
heat oil, once hot, slightly reduce flame and press the dough in hot oil directly, be careful of your hands. it may fall in pieces, no problem.
Don't stir it for a minute, then turn the pieces, fry on medium high till crisp, drain well and remove on a paper towel to remove excess oil, cool and store in an airtight container, nice crunchy to have with your afternoon tea/ coffee.
TIP- along with potatoes, you can chop green chilies as per taste and grind along with garlic if you like that smell and taste. If you grind green chilies, no need to add red chili pdr.
