Ragi Barfi

Preparations

Take a heavy bottom pan and melt ghee in it. Fry cashews and raisins, remove once golden in a small cup,
Then add ragi flour in the same pan and stir continuously. At this stage, lower your gas flame to prevent ragi flour from burning.
When the flour turns light brown and aromatic, add cardamom powder and stir it.
Remove the flour from the gas immediately then let it cool for 5-7 minutes ensure not to cool it completely, as it should be warm.
Add jaggery in the flour and mix it well. Jaggery will start melting because of the warm texture, add the fried nuts and raisins, reserving a few to sprinkle on top.
If texture is little bit dry then add little more ghee
Grease your a plate/ tray  add this mixture level it. Garnish with chopped cashew nuts and raisins, pressing it down lightly.
Cool it completely and cut it in desired shape.
