Ingredients
bottle gourd grated 2 cups
green chilies chopped 2-3 or as per taste
ginger finely chopped 1 tsp
garlic chopped 1 tsp ( optional)
coriander leaves chopped 1 tbsp
jeera 1 tsp
sesame seeds 1 tbsp
salt to taste
jowar flour 1 cup
rice flour 1/2 cup
wheat flour 1/2 cup
besan 1/4 cup
ghee/ oil to cool
water 1-2 tbsp
Preparations
in a big bowl add grated bottle gourd, chilies, ginger, garlic, coriander leaves chopped, all the flours, salt to taste, mix well, if need be sprinkle wee bit water to knead o a soft dough.
cover and rest the dough for 30 minutes
heat a tawa, once hot,spread little oil, wet your hand, on a moist cloth spread the dough into a thin parantha with your hand
with the help of cloth lift the parantha, turn it upside down on the tawa, remove the cloth, cover and cook the parantha on medium flame.
once the bottom is cooked, turn and smear little oil/ ghee, cover and cook for 1-2 minutes, then remove the lid, press it down with a spatula on all sides, and cook till brown.
remove, serve hot with some pickle, curd/ raita, or dal to make it a complete meal.
