This is a diabetic special sweet, as it contains dates only for sweet, which is healthy, full of fiber, iron, more fiber from oats, Vitamin E from desiccated coconut and nuts, omega 3 from walnuts.
Ingredients
oats lightly roasted and powdered 1 cup
dates if using Medjool dates you don't need to soak them in water, you can straightaway grind 6-7 dates till smooth. If other dates, soak in warm water, drain and grind to smooth paste with 10 dates.
dates cut lengthwise about 6-8
desiccated coconut 1/2 cup
walnuts, cashews finely chopped or crushed 2-3 tbsp
soak almonds in warm water about 1/4 cup,drain and remove skin grind them to a fine paste
cardamom pdr 1/2 tsp
ghee 1-2 tbsp
salt a pinch
In a bowl, add powdered oats, desiccated coconut, salt,dates and almonds paste mix well to get a smooth dough, if need be add some ghee to make the dough.
roll out the dough between butter papers into thin rectangle. If need be trim the edges.
mix the sliced dates and nuts, spread it in one corner leaving about 1-2 " space, as you need to roll it into a tight roll, using the paper to hold and roll tight, once rolled with the paper, with the rolling pin push it closer the roll, then close the ends tight, roll them with your hands.
Keep them in the freezer for 10-15 minutes, then with a very sharp knife cut them into 1/2" rounds, after you cut the rounds, you can remove the butter paper.
You can see the dark dates covered with white oats. You can roll the rolls in chia seeds and desiccated coconut mixed together. Or with roasted sesame seeds and desiccated coconut.
