Grilled Pneapple Salsa

Ingredients

pineapple 1

cooking spray as needed

red bell pepper 1

onion 1

cilantro 1/4 cup

jalapeno slices 1 tbsp 

lime juice  1 tbsp

garlic clove 1

white sugar 1 tsp

salt  and black pepper pdr to taste 

 

Preparations

Cut, peel and core the pineapple into half-inch slices.

Wash and chop the cilantro, finely chop the bell pepper and onion. Grind fresh pepper in a pepper mill.

Grill the pineapple slices until light brown and caramelised in a pan with some cooking spray for about 10 minutes, remove from the pan and then chop them after cooling.

Combine pineapple, bell pepper, onion, cilantro, jalapeno slices, lime juice, garlic, sugar, salt and black pepper together.  Refrigerate for about 1 hour to chill and blend the flavours.
