Broccoli-Spinach Paranthas

 A very healthy parantha, ever thought of having such a colourful healthy  parantha for breakfast, which will give you enough energy to last past lunch time ! 

Ingredients

broccoli finely grated 1 small ( or you can mince fine in a blender)

garlic finely chopped 1 tbsp ( optional)

spinach puree 1 cup ( not too thin)

salt to taste

ajwain 1 tsp

ginger finely chopped 1 tsp

green chilies finely chopped to taste

coriander leaves finely chopped 1 tbsp

oil 1 tsp

ghee to cook

whole wheat flour 1 1/2 cups + for dusting and rolling the parantha

 

Preparations

in a big bowl add broccoli grated, garlic, ginger, green chilies, spinach puree, coriander leaves , ajwain, salt and mix well

add the flour, no need to add water, as there is moisture in spinach puree

knead a soft dough, last add oil, smear on top, let it rest for 10 minutes.

heat a tawa, take a big ball of dough, dust the rolling board well, roll it into a circle, smear some oil/ ghee all over, then fold it from both sides, top and bottom

then roll it as a thin square, cook on hot tawa on medium heat

once the bottom is cooked, flip over, smear ghee all over, press and cook till brown, flip and press the other side again till brown

cut into a triangle, serve hot with some paneer gravy, pickle and raita to complete the meal.
