Idlis have become world famous dish, as it is light, healthy, complete meal when eaten with sambar and chutney. Many a time, you may not have the time to grind the rice and dal and leave it overnight for fermentation. Still you long for some wholesome idlis, this is the perfect recipe for it.
Ingredients
suji 1 cup
curd 1 cup ( beaten well)
vegetable chopped 1 cup ( beans, carrot, green peas, cauliflower, corn)
water as required
salt to taste
oil 1 tbsp +
mustard seeds 1/2 tsp
urad dal 1 tbsp
chana dal 1 tbsp
green chilies chopped as per taste
curry leaves 2 sprigs finely chopped
ginger 1 tsp finely chopped
hing little
baking soda 1/2 tsp
Preparations
in a kadai/ pan heat oil, add mustard seeds, once it crackles, add the urad & chana dals along with hing, green chilies, ginger, curry leaves, fry well till the dals turn golden, add the suji roast it for 2-3 minutes.
take out the roasted ingredients in a big bowl, add the cut vegetables, mix all well adding salt to taste.
after 5 minutes once suji has cooled a bit, add curd, water, mix well to get a smooth batter, the batter should not be too thick nor flowing, like the idli batter.
rest the batter for 5 minutes , in the mean time, heat the pressure cooker or a steamer with water, keep it on medium heat, grease the idli plates with oil
now add baking soda, mix well, pour the batter in each mould, keep it in the steamer covered
allow the idlis to steam for 10-12 minutes on medium heat
switch off the gas, let the idli rest for 2 minutes, with the help of a knife/ spoon remove the idlis, serve hot with chutney and sambar to make it a complete meal, as it has carbs, protein, vitamins, steamed, hence very healthy and filling.
NOTE- you may add whatever vegetable you like. You can add some cashews too, add it with the dals while frying them.
